Saozi noodles are a flavor snack in Shaanxi, with dozens of varieties, of which Qishan Saozi noodles are the most famous. Saozi noodles are characterized by slender noodles, uniform thickness, fresh and fragrant saozi, and oily and ruddy noodle soup. And Qishan Saozi noodles have a particularly strong local flavor. It has the characteristics of thin tendons, light, Wang, sour, spicy and fragrant, and it is flexible and smooth to eat.

Saozi noodles were developed and changed on the basis of "long-lived noodles" in the Tang Dynasty. "Yi Jue Liao Miscellaneous Notes" says: "The Tang people have many soup cakes on their birthdays, and the world calls them "" long-lived noodles" "." Tang Dynasty poet Liu Yuxi has a poem: "Yu was a guest, and he ate soup cakes with chopsticks." Food such as noodles was called "soup cakes" in the Tang Dynasty. The soup cakes mentioned in Liu's poems were "long-lived noodles." It was a good point to treat guests in the Tang Dynasty. According to legend, when Su Dongpo was an official in Shaanxi, he especially liked to eat this kind of noodles, and wrote a poem praising it: "I want to go to the soup cake customer, but I am worried about writing the wrong book."

There is a folk story about "Changshengmian" being renamed "Saozi Noodles": A long time ago, a family in Qishan married a beautiful, intelligent, diligent and clever daughter-in-law. The day after the new daughter-in-law arrived at the in-law's house, she cooked a meal of noodles for the whole family, and the family praised the noodles for their smoothness and deliciousness. Later, her uncle was admitted to the official position, and he invited his classmates and friends home as guests. He asked his sister-in-law to make the best noodles for everyone, and everyone praised it after eating. Since then, "sister-in-law noodles" have become famous. Because this kind of "sister-in-law noodles" must be topped with saozi, people also call it "saozi noodles." According to historical facts, saozi meat appeared in the Northern Song Dynasty, and "Mengliang Lu" recorded that there were shops specializing in processing and selling saozi meat. But whether "saozi noodles" had appeared at that time is still unknown. By the Ming Dynasty, Gao Lian wrote the "Saozi Meat Noodles Method" in "Eight Notes on Zunsheng", so it can be said with certainty that "saozi noodles" were available at least before Gao Lian wrote this book.

Sauce noodles are quite expensive in Shaanxi. In addition to following the relevant Tang Dynasty "longevity noodles" customs, such as eating them on birthdays and birthdays, they should be used to entertain guests at every wedding or funeral event, or during festivals. In the old days, there was also such a custom in rural Shaanxi: the day after the new daughter-in-law passed the door, a grand rolling ceremony was held in the in-law's house. The new daughter-in-law rolled the noodles in front of the guests to test their skills. Those who are highly skilled, the rolled noodles are evenly thick and slender, and will not break when they are cut into the pot. Only such a new daughter-in-law can win everyone's praise.
